Grown by over 1,200 smallholder producers at elevations between 1,850 and 2,200 MASL, these heirloom Ethiopian varietals are hand-harvested at peak ripeness and sun-dried on raised beds for up to 18 days before a four-week rest period prior to hulling — a process that builds remarkable depth and clarity in the cup. Expect cocoa and dried jasmine with mild amaretto notes, tart acidity, and a mellow fruitlike sweetness.
